Also, consider disqualifying HPal/Warrior/Frost Mage as a 3s comp because it's easily the most imbalanced for this patch, and the teams who play it will basically faceroll to victory.

I'm afraid, but if you are blue geared fresh 60, it is just better to stay out from the tournament
there is not that much "skill" in level 60 "arena", so therefor this is kinda a fun event between <hy> & <tryhards>, with a nice prize for the winning teams

So engineering grenades are allowed, and why is that?
If we're going to play real arena tournment, then go without anything, that counts as consumables as well!
Second thing, banning several items is good and I support that, but the list you made is far from complete since some items give unfair advantage in PVP, and I'm gonna name few:
Dark Edge of Insanity = procs every 3-4 swings, unlike retail where it's arround 10%, test it and you'll see what I'm talking about
Dark Iron Pulverizer = 8 seconds stun that procs nearly every second swing, while the retail proc was quote "1 proc in five minutes, read 1.11%!" and the beauty of proc is, doesn't share DR with anything. Stun4Life
.
.
.
I will add more as soon as I get time to write them down, but isn't that bit lame not to allow things like BWL priest class trinket, and to allow this?
It's quite simple, you can't make fair 2s 3s here, because someone will always exploit things I've mentioned above.

Ironfoe = with LOL proc rate, and if you equip 2h afterwards = shitstorm 3k+

Dark Iron Pulvelizer procs nearly every second swing? Woah, I have it on my shaman and it _never_ procs - plus, the weapon does not deal any damage at all.
Anyways - these are the rules, and I might update them later on.
